Sweet Potato Hash with Plant Based Pork
Ingredients:
- 1 package of Porkless Mix
- 2 thin slices of white onion, finely chopped
- 1 garlic clove, minced
- 3 tbsp. cooking oil, separated
- Pepper to taste (we used ½ tsp.)
- 1 package of Porkless Mix
- 1 cup of water
- 3 cups mixed peppers & onions, chopped
- 1-2 tsp. Turmeric Chicken Salt
- 1 cup roasted sweet potatoes
Instructions:
- Pan fry onion and garlic with 1-2 tbsp. of oil until fragrant and translucent. Set aside.
- In a medium mixing bowl, pour Porkless Mix. Add cooked onions & garlic, stir well.
- Add 1 cup of water and 1 tbsp. of oil. Mix until well combined.
- Cover and refrigerate for 10 minutes.
- Heat 1 tbsp. of oil in a pan over medium heat. Add Porkless mix and use a spatula to separate. Cook ground Porkless mix until golden brown and slightly crispy. Set aside
- In the same pan, add 1 tbsp. of oil, 3 cups of peppers & onions, salt & pepper to taste, and 1-2 tsp. of Turmeric Salt. Cook until soft.
- Serve with fresh tomato and avocado. Garnish with fresh parsley.
To roast sweet potatoes:
- Cut 1-2 sweet potatoes into 1 inch cubes
- Drizzle with oil and sprinkle with Original or Turmeric Chicken Salt
- Roast at 400F for 15-20 minutes until soft with slightly crispy edges.
